Rice Krispies Treats

Is anyone else with me that the pre-packaged Rice Krispies treats DO NOT taste nearly as good.. or honestly even remotely like the homemade ones. Yes it’s marshmallow and rice cereal but something is off. I’ve known it since I was a kid and would only eat homemade ones like a brat. But honestly, can you blame me?

Okay, so I may call these summer squares but that’s just because that’s kind of what they taste like. They are very obviously Rice Krispies treats though. I don’t know if there is any other name they are ever called in most places. So I COULD have called them Summer Rice Krispies treats or Orange Lemon Rice Krispies treats but that just doesn’t sound as simple and to the point as summer squares. Moving on.

If you’ve made Rice Krispies treats before you know they are super simple. You could make them in the microwave but honestly I find the stovetop easier. Which, when does that ever happen? If you haven’t made them before.. buckle up. You’re in for a delightfully delicious and easy experience. These have a good ratio of marshmallow to cereal, and then vanilla to add to the creaminess, zests to add a little flavor and brightness, and a mix of salted and unsalted butter because adding a little salt to a sweet dish honestly improves it in an understated way. Get ready to eat because they are ready even with setting time in an hour!

Ingredients

  • 2 tbsp Unsalted butter
  • 2 tbsp Salted butter
  • 6 cups Puffed rice cereal (e.g Rice Krispies)
  • 6 cups Marshmallows
  • 1 tsp Vanilla extract
  • Zest of ½ small orange
  • Zest of ½ small lemon

Instructions

  • Lightly grease pan. I use an 8×8 or 9×9 for thicker treats, use a 9×13 pan for thinner. Set aside
  • Melt butter in a saucepan big enough for all ingredients over medium/medium-low heat.
  • Add in marshmallows, stirring frequently until melted.
  • Add in vanilla and zests and fully mix into melted marshmallow and butter.
  • Turn off and remove saucepan from heat, add in cereal and mix until coated.
  • Dump mixture into prepared pan and lightly press into an even layer. Using a butter wrapper or a greased piece of wax or parchment paper can help you flatten out the top.
  • Let set for about 30 minutes before cutting to allow marshmallow to cool. Enjoy!
